With the better part of a decade behind us, we’ve been thinking a lot about where we are and how we want to keep growing and evolving into the best version of ourselves we can. We have plans for the menu (you may have already noticed a few new items) and our space that we are very excited about—nothing dramatic, but many small things that we believe will make for a better restaurant. These changes will also affect our hours of operation and we wanted to make sure our guests and our friends, all of you who have supported us so much over the years, know why.
We’ve always wanted to do special dinners and initially thought having Sundays closed would afford us the opportunity to do that, but frankly we typically just don’t have enough time and rarely want to give up our Sundays.
We also don’t often get to take the trips together as a crew that we need for our development. While we are blessed on the Palouse with so many good coffee shops, bars, and restaurants, we believe it’s important for us to go out as a team and see what the greater region is doing with food, drink and hospitality.
Lastly, but probably most importantly, as I’m guessing most of you can attest to, the way we work in this world is a bit of a grind and the service industry doesn't stand as the best example of sustainable, healthy work places. We think one more day off will be transformative for our quality of life and so beginning July 17th we will be closing on Mondays. Our new schedule will be 5pm-10pm Tuesday through Saturday.
This will allow us to take trips as a crew, work on our space, and afford us the time to host special dinners on a monthly basis—which will include guest chef and winemaker dinners, tasting menus, family style brunches, as well as events to supplant our Monday special. These will be posted on Facebook and our website, and will keep evolving, so your input is very welcome.
Additionally, we will be closed one week per year—this year will be July 23rd-30th—for crew development and construction projects.
We really believe this will ultimately make for a better restaurant and thus be better for all you wonderful people who have been with us all these years and so thank you again for your support and understanding.
